That disagreement is the single most useful thing the data has to say. Understanding why the two measures diverge tells you more about choosing food than any individual number does - and it explains why "high-protein" on a package can mean two completely different things.
Two questions, two answers
Protein per serving answers a quantity question: if I eat a normal portion of this, how much protein do I get? It is the measure that matters when you are trying to reach a daily total, because totals are built from portions rather than from percentages.
Protein density answers an efficiency question: of the energy this food brings with it, how much of it is protein? ProteinTally calculates it the standard way - protein grams multiplied by 4 kcal, divided by total calories - and expresses it as a percentage of calories from protein. It is the measure that matters when you want protein without a lot of accompanying energy.
The reason these split apart is that serving sizes are not standardised across food types and calories are not evenly distributed. A cup of cooked lentils is a big portion of a moderately dense food. An ounce of almonds is a small portion of an energy-dense one. Ranked by serving they look closer than they are; ranked by density they look nothing alike.
- Per serving: how much protein a realistic portion delivers.
- Per calorie (density): what share of the food's energy is protein.
- Density = protein g × 4 ÷ total calories, expressed as a percentage.
The foods that top the density list
Lean seafood and lean poultry dominate the density ranking, and by a wide margin. Shrimp is about 97% protein by calories; canned tuna in water is about 88%; cod and turkey breast are both around 87%. Chicken breast comes in around 75%. These are foods where the protein is essentially the whole point of the food, with very little fat or carbohydrate riding along.
Egg whites are a striking case: about 84% of their calories come from protein, against roughly a third for a whole egg. The yolk is where nearly all of the egg's fat and most of its calories live, so removing it moves the same food from one end of the density scale to the other.
Isolated protein powders sit near the top too - whey protein powder around 89%, soy protein concentrate around 78% - which is unsurprising, because concentrating protein and stripping everything else is precisely what processing them does. A couple of near-pure isolates in the database even round to slightly over 100%, which is not free energy: the 4 kcal per gram used in the arithmetic is an average, and USDA's own energy figure for an isolate can come out a shade below protein grams times four. Gelatin powder, sold as collagen, sits at the very top of the density list and is still a poor general protein source, which is a good reminder that density is one axis and amino acid profile is another.
In the ProteinTally vocabulary, anything at or above 60% of calories from protein is labelled extremely protein-dense, 35-59% is very protein-dense, and 20-34% is moderately protein-dense. Below 20% the food is being described honestly as more of an energy food than a protein food.

High per serving, low per calorie
The clearest examples of the split are nuts and nut butters. Two tablespoons of peanut butter deliver 7 g of protein - a respectable amount - inside 188 calories, which puts it at roughly 15% of calories from protein. An ounce of almonds is 5.9 g of protein in 162 calories, again about 15%. These are genuinely useful protein contributions and simultaneously energy-dense foods, and both facts are true at once.
Cheese behaves similarly. An ounce of cheddar is 6.4 g of protein in 113 calories, just under a quarter from protein. Parmesan is more protein per ounce at 10 g and is genuinely denser at about 37%, but it is still a food you measure in ounces rather than build a meal around.
Fattier cuts of meat make the same point in reverse. Bacon is only about 26% protein by calories despite being an animal food, because most of what is in it is fat. Being animal-sourced does not make a food protein-dense; being lean does.

High per calorie, low per serving
The mirror-image trap is more common and more misleading, because it is the one marketing likes. Cooked spinach is about 52% protein by calories, which sounds spectacular until you notice that a whole cup of it contains 5.3 g of protein - because the entire cup is only 41 calories. Grilled portabella mushrooms are around 45% and 4 g a cup. Plain sliced mushrooms are denser still at about 56%, and a cup of them is 2.2 g. Cooked kale is about a third and 3.5 g.
These foods are protein-dense in the strict arithmetic sense and are still not protein sources in any practical sense, because you would have to eat implausible volumes to reach a meaningful total. A claim like "spinach is a great source of protein" is technically defensible on the density measure and useless as advice.
This is exactly why the whole-database density ranking exists alongside the per-serving one instead of replacing it. Reading either list on its own produces a distorted picture; reading both produces an accurate one.

Which measure should you use?
If your problem is that you are not reaching your daily protein total, use the per-serving ranking. Volume of protein per realistic portion is the constraint you are actually fighting, and worrying about density at that stage just narrows your options for no gain.
If your problem is reaching that total while keeping total energy intake in check - the situation the higher g/kg ranges are usually paired with - density becomes the deciding factor between two otherwise similar foods. It is the difference between reaching 130 g of protein comfortably and reaching it with several hundred extra calories you did not want.
In practice most people end up using both without thinking about it: per-serving thinking for the main protein at each meal, density thinking when choosing between snacks. The foods that make everyone's life easiest are the ones near the top of both lists at once - lean fish, poultry breast, plain Greek yogurt and low-fat cottage cheese, egg whites, and the lean soy foods.
